Rocky Road Cookies

I had a lot of marshmallows left over from last week, so I decided to make another ooey gooey cookie!

Rocky Road Cookies

Ingredients:
1 1/2 cup butter, room temperature
1 cup sugar
1 cup light brown sugar
2 eggs
2 tsp vanilla
3 cups flour
3/4 cup cocoa
2 tsp baking soda
1/2 tsp salt
3/4 cup toasted walnut bits
1 1/2 cup mini marshmallows
1 cup chocolate chips

First, to see how to toast the walnuts, go to this link. You want them to be completely cool before you add them to the dough.

Preheat oven to 375.

With an electric mixer, cream together butter and sugars. Add in eggs and vanilla.

In a separate bowl, combine flour, cocoa, baking soda and salt. Slowly add the dry ingredients to the wet ingredients. Now add the walnuts, marshmallows, and chocolate chips.

Roll dough into 1 or 2 inch balls and place on paper-lined baking sheet. Bake for 9 minutes, or until the top of the cookies start to look slightly dry.

Allow to cool and pour yourself a nice big glass of milk. :)
These were another big hit. I made all the cookie recipes I’ve made in the last 6 weeks and took them to my niece’s and father’s joint birthday party. I wanted to get people’s opinions to see if I could make any improvements. I got nothing but good feedback. Which was kind of frustrating. My family is BRUTALLY honest, so I know they weren’t holding back trying to spare my feelings. One of my sisters said I should add nuts to the maple cookies, which gave me a different idea all together that I’ll be trying in two weeks. Next week I’m going to try to make plain old chocolate chip cookies, but with a few tricks I picked up reading articles from fancy-schmancy New York bakers.

    I did notice! It just took a while because Wordpress sent it to the “spam folder” because of the links. No biggie, though. I dug you out and un-spammed ya. :)
    I’m happy you liked the cookies! Yours look great! I hope to bring back cookie Friday, soon. The husband changed jobs so I didn’t have anyone to make them for, but now he has a team of cookie appreciating peoples. I’m trying to think of something really wacky.
